Purple Dinosaur Smoothie

Even though my kids aren't in Barney's target audience anymore, the purple dinosaur is the first thing I thought of while working on a name for this recipe.

For whatever reason, #thesekids are over green smoothies for the moment, so I came up with a simple fruit one to get them back on the smoothie train.

Purple Dinosaur Smoothie

Ingredients (Serves 3 kids)

  • 2 cups soy or almond milk
  • 1 cup frozen blueberries
  • 1 frozen banana, peeled
  • 1/8 teaspoon cinnamon

Instructions

Blend all ingredients until smooth.

Zaalouk Recipe

On the same day Lisa and I recorded the Asian tofu salad video, she made us zaalouk--one of her favorite Moroccan dishes.  Like a lot of other wonderful cooks, Lisa isn't one to measure her spices and other ingredients.  She relies heavily on color, taste, texture and smell to guide her in the kitchen.

Anyway, I didn't want to leave this post with just pictures, so here's a list of all the ingredients Lisa used in her recipe:

1 large eggplant

Diced tomatoes, canned

Olive oil

Garlic, minced

Dried parsley

Cumin

Paprika

Salt

Pepper

Vinegar (red wine or champagne)  or lemon juice or sumac  (something acidic)

Saute aromatics in olive oil, then cook everything until soft, and mash it up with a potato masher.

Drizzle olive oil on top.

Eat with pita bread scooping the zaalouk in with your fingers--in true Moccorran style.

Easy Chocolate Pudding

All I need in this life of sin is a bowl of anything that includes chocolate.

You know what annoys me about food blogs? When a recipe claims to be easy but has a trillion steps and a trillion more fresh ingredients that need to be chopped. I love to cook and don't mind the extra work, but even I look at some of these recipes and find that language so darn condescending.  It's like me saying this cinnamon roll recipe is easy.  Easy to who?

Anyway...I can say with confidence this chocolate pudding recipe is easy and guess what else? It's pretty darn good, too. 

All you need is 4 ingredients and a blender.

The avocados don't initially give the pudding an overwhelming flavor, but after 24 hours the taste is bitter (likely from the combination of avocado & cocoa powder) and the avocado flavor more pronounced.

If you have some leftovers avocados, a banana, and olive oil around make yourself a facial mask to moisturize your situation. 

Chocolate Pudding

Ingredients (Serves 4)

  • 5 avocados-peeled & pitted
  • 1 cup of raw cacao powder or cocoa powder
  • 1 cup of agave syrup
  • 1 cup of almond milk (you may want to start with 1/2 cup and increase as needed)

Instructions

Add all ingredients into a blender and mix well. Add a little more almond milk (1 tbsp at a time) if your blender needs help combining the ingredients.

Eat immediately or serve chilled a few hours later.

Best if enjoyed within 24 hours

Veganize it! Rice Krispies Treats

This is an example of a recipe that is easily made vegan with a couple of changes.  I couldn't believe how similar the taste was to homemade Rice Krispies treat from when I was a kid.  All three of my kids gave it a thumbs up!

Some tips:

The marshmallows will take longer to melt down in comparison to conventional ones.

This treat is best enjoyed immediately because the squares will harden up after a few hours.

I used Dandies vegan marshmallows and you can order them online or pick them up at a health food store.

Vegan Rice Krispies Treats

Ingredients (10 square bars)

  • 2 tbsp vegan margarine
  • 2 ½ cups vegan marshmallows
  • 3 ½ cups Rice Krispies cereal

Instructions

Melt margarine in a medium pot. Add in marshmallows and cook for 5 minutes on medium heat, stirring frequently. Turn off heat and mix in cereal. Transfer to a square or rectangle shaped dish and press down with a rubber spatula.

Cut into squares. Eat immediately or store in an airtight container for up to 2 days.

Got 5 Minutes? No-Bake Donut Holes

This is one of our favorite recipes!  I can quickly throw these together for the boys to snack on in the afternoon or as dessert after dinner. 

Recipe adapted from Ani Phyo's book, Ani's Raw Food Kitchen

Ani Phyo uses 2 cups of pineapple and dates but 1 cup of each is plenty in my experience.

Donut Holes No bake/fry (raw vegan)

Ingredients

  • 1 ¾ raw almonds
  • ½ teaspoon sea salt
  • 1 vanilla bean, scraped or 1 teaspoon vanilla extract
  • 1 cup dried pineapple, chopped (it's ok to skip this step if you don't have dried pineapple)
  • 1 cup Medjool dates (or any other dates available)
  • 1/3 cup plus ¼ shredded coconut

Instructions

In food processor, place almonds, salt, and vanilla. Process into a fine powder. Slowly add chopped pineapple and dates mixing well. Place in a large bowl. Mix in 1/3 cup shredded coconut.

To serve, use your hands or an ice cream scooper to form donut holes. Roll holes in ¼ cup shredded coconut.
