What's on the Menu for the Weekend? Burgers & Fries, of Course!

My favorite veggie burger and baked sweet potato fries - It gets no better! 

This meal is designed for the weekend, or a day in which you have more time since there are multiple steps (especially for the veggie burger). Don't worry, it's so worth the wait!

Ingredients:

4 uniformly shaped medium sweet potatoes, peeled

1 teaspoon sea salt

1 tablespoon extra-virgin olive oil

Directions:

Cut the potatoes into slices about 1/2 inch thick and then cut them 1/2 inch length-wise into the shape of fries.

Preheat the oven at 450º F.

Combine the sweet potatoes, 3 quarts of cold water, and 1 teaspoon of salt in a large pot over high heat. Parboil, uncovered, for 10 minutes.  Drain in a colander and pat well with a clean kitchen towel. In a large bowl, toss the sweet potatoes with the olive oil.

Arrange fries on a parchment-lined baking sheet and bake for 50 minutes (see note below), gently stirring every 15 minutes to ensure even browning, until tender and caramelized.

Note: Be sure to watch your fries since I only needed 30 minutes (not the 50 minutes from the recipe) to bake them.

Want to save time? Make your burger patties ahead and refrigerate until you're ready to cook. You can also deep fry the potatoes in hot oil for about 4 minutes opposed to baking them.
