7-Day Raw Food Challenge | Are You In?

We all need to hit the reset button and this is the perfect time of year to do it.

I did a juice cleanse a couple of years ago (wasn't the best experience) and told myself that I would only do another one if I could chew my raw fruit and vegetables, too.

If you're interested in transitioning to a vegan lifestyle, I think doing a raw vegan cleanse/detox is a great way to reset your palate.

Some of the people I've interviewed on my podcast started their vegan journey this way.

They start off by doing a 7-30 day challenge of raw vegan meals, smoothies and/or juice and then transition to a healthy vegan lifestyle of both raw and cooked meals.

Since I still have to cook for the kids (Eric is joining me - Woo hoo!), I will keep our raw meals super simple during this challenge.  We will probably eat mono meals, drink smoothies and eat basic salads with lots of raw greens the whole time.

GUIDELINES FOR THE 7-DAY RAW FOOD CHALLENGE:

  • No meat, dairy, wheat, eggs, processed sugar or alcohol
  • Eat plenty of fresh fruit, raw vegetables and drink fresh juice & smoothies
  • Drink lots of water
  • You can also drink warm tea and warm water with lemon
  • Be super gentle with yourself and share your experiences on the Facebook page

Carrot, Apple & Ginger Juice | Ooh, Baby I Like It Raw #2

The best way to get kids to make healthier choices is by getting them in the kitchen to help. 

Bran is a juicing beast and helped me put together this sweet and delicious fresh juice.

I love to keep my juice and smoothies simple with just a few ingredients. This one only has 3 ingredients and of course I had to serve it on the rocks. Cold juice, baby!

Fresh Carrot, Apple & Ginger Juice

Ingredients

  • About 10 carrots
  • Small knob of ginger root, peeled
  • 4 apples

Instructions

Run the carrots through a juicer

Next add in the ginger

Finally run the apples through the juicer

Kelp Noodles with Cheezy Sauce | Ooh, Baby I Like It Raw #1

You know I love doing blog series! I just started the "Ooh, baby I like it raw" series to share more raw vegan (uncooked) recipes. Enjoy!

How is your day? I've been enjoying Kristina's Fully Raw challenge! It's only day# 2 but it a lot easier than I thought it would be.

For lunch yesterday I made raw kelp noodles with a simple and delicious cheezy sauce. 

No cooking required? I could get used to more raw recipes!

Kelp is a sea vegetable (seeweed) that is low in calories, gluten-free and is a decent alternative to wheat and/or rice noodles. It's clear, thin and doesn't taste like anything solo. You can find it at an Asian market or order it online

Only one of my 3 kids liked it. Since it was their first time, I'll try it again in another recipe. The texture is fine, so maybe they didn't like it because they knew it wasn't regular spaghetti. lol You know how kids can be. lol

I don't know if the olive oil I used in this recipe is considered "raw" but everything else is.

I thought it was yummy though. Here's the simple sauce recipe...

Kelp Noodles & Cheezy Sauce

Ingredients (serves 3)

  • 1 lb kelp noodles
  • 2 cups of raw cashews (soaked in water for at least 4 hours)
  • 5 basil leaves
  • 1/4 cup lemon juice
  • 1/2 teaspoon salt
  • 1/8 cup olive oli
  • 2 teaspoons soy sauce
  • 2 tablespoons nutritional yeast (you can find it at a health food store or online)
  • 1/2 teaspoon black pepper
  • 1 garlic clove
  • 1/2 cup vegetable broth or water (add more if necessary)

Instructions

Blend together everything (but the kelp noodles) in a food processor, slowly adding the broth/water. Scrap down the sides and continue to blend until smooth. Add more water/broth if necessary.

Toss with the kelp noodles and garnish with more basil.

Instead of saying I'm not eating junk, I'll add an extra vegetable to my plate.

Instead of saying no more soda, I'll buy kombucha (I stan for this!) and a new filter for my water pitcher.

Instead of saying no more sugar, I will put more fruit in my grocery cart. 

It's all about mindset, baby!

Establish little habits, do you best and you will move forward.
