Peet's Coffee Has A Vegan Breakfast Sandwich

One thing about me…

When a company offers a new vegan product, ima try it!

A few months ago I saw on Instagram that Peet’s Coffee has a WHOLE plant-based sandwich for us.

Most restaurant chains only give us a vegan patty (Beyond Meat or Impossible), so it’s great to see Peet’s Coffee offer a WHOLE sandwich featuring Just vegan egg, Violife cheddar cheese, and an everything bagel.

I think it’s more expensive compared to their other breakfast sandwiches, but it’s perfect while traveling, or if you don’t feel like making your own breakfast.

It’s delicious!

Simple Breakfast & Football

As much as I love summer, it's been nice to have cooler weather for the last few days. 

Since blueberry and strawberry season is ending, I'm eating as many of them as possible. I even topped my So Delicious ice cream & vegan chocolate syrup and strawberries the other day. Don't judge me. :-)

For breakfast yesterday we enjoyed a simple meal of banana, berries, vanilla Almond Dream yogurt and plain granola. Doesn't it look so yummy?! It was. :-) I got the idea from FitMenCook on Instragram. His version has Greek yogurt but it very easy to sub that with a vegan one.

I'm trying to keep meals a little more simple since football season started. Shout out to all my football moms!

Elijah played his first game yesterday and we've been busy taking him to practice 3 times a week and getting him settled.

Vegan Brunch & Making Decisions

I'm not a shy person, but I have a hard time putting myself out there to meet new people...especially in a group setting.  My palms get sweaty, my heart starts to pound, and I talk faster than normal (is that even possible? lol).

A couple of weeks ago, Rosetta invited me to her place for brunch with her and three other ladies. Instead of talking myself out of the invite (like I usually do when invited anywhere) I pushed passed my anxiety and accepted.

We had an amazing time! Lots of food, music, wine, and discussions about business and life. I'm sooo glad I didn't miss out on this opportunity to hang with Rosetta again and meet some other amazing women.

Let's talk about the food! I never expect people to cater to my vegan diet but it warms my heart when they do.

We started off with a cheese platter, but Rosetta made sure to put almonds, grapes and  dates on it for me.

Then we cooked (mostly Rosetta lol) fried potatoes, greens and grits. Yummers! The other ladies also had salmon and Rosetta added cheese to their grits after serving mine.

We had a vegan apple pie from Whole Foods and So Delicious ice cream for dessert. OMG!

It's funny how making the decision to get uncomfortable is helping me come out of this self-imposed anxiety bubble. I've been saying I want to change for a long time, but making the decision is what led me to actually stepping out there and doing it.

I know we're talking about anxiety in this post, but this same decision principle applies to everything else in life, too. With food, if you really want to be a vegan make the decision.  Then spend some time researching vegansim, cooking and experimenting. :-)

Pecan Banana Muffins

These muffins are moist, simple and make a great breakfast with fresh fruit.

Pecan Banana Muffins

Cook Time: 18

Ingredients (10-12 muffins)

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan margarine, melted
  • 1/3 cup raw sugar
  • 1 tsp vanilla extract
  • 2 bananas, mashed
  • 1/3 cup pecans, chopped

Instructions

Preheat oven at 400º

Sift flour, baking soda, and salt into a small bowl. Set aside.

In a medium bowl, whisk together the vegan margarine, sugar, vanilla extract, and bananas. Add in half of the sifted flour until combined. Then mix in the remaining flour until all flour has been incorporated. Fold in chopped pecans.

Divide batter among muffin cups and bake, 16-18 minutes, or until a toothpick inserted in the center of one comes out clean.

Makes 10-12 muffins

What's For Breakfast? Simple Tofu Scramble

This is a quick and delicious favorite in my house.  You can enjoy it according to my recipe, or keep it even simpler with salt and pepper.

Tofu Scramble

Prep Time: 5

Cook Time: 9

Ingredients (serves 4)

  • 14 oz container of tofu, drained
  • 1/3 cup red onion, chopped
  • 1/3 green or red bell pepper, chopped
  • 1 tablespoon oil
  • 1 teaspoon black pepper
  • ½ teaspoon paprika
  • 1 1/2 tablespoons salt
  • 1 tablespoon garlic powder
  • 1 tablespoon turmeric (optional)

Instructions

Wrap block of tofu in a cloth towel and place a heavy book on top to drain additional water for 5 minutes.

Add oil to a pan on medium heat and sauté onion and bell pepper for 3 minutes,

Crumble tofu with hands and add to pan.

Cook for 6 minutes,

Add in black pepper, paprika, salt, and garlic powder.

Use additional seasoning, if needed.
