Easy Vegan Chicken Rice and Lime Soup Recipe

I’ve been making this vegan chicken rice and lime recipe for about three years.

This recipe takes about 30-minutes and is very family-friendly.
The measurements below is enough soup for 3 people. 
You can easily double the ingredients to serve up to 6 people.

Easy Vegan Chicken Rice and Lime Soup

Ingredients (serves 3)

  • 1 tablespoon olive or coconut oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 stalks of celery, diced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 14.5 oz can diced tomatoes
  • 4 cups vegetable broth
  • 9 oz vegan chicken (you can find @beyondmeat brand in the frozen section at Target)
  • 1/2 juice of lime
For serving:
  • 2 avocados
  • 1/2 cup cilantro
  • Red chili flakes (if you want a little heat)
  • Cooked rice (about 4 cups)

Instructions

In a medium pot, sauté the onions and garlic for 3 minutes on medium heat, stirring occasionally.

Stir in celery, cumin, smoked paprika, oregano and salt.

Cook for 3 more minutes.

Next, add diced tomatoes and broth and bring to a boil.

Chop vegan chicken into bite-sized pieces.

Once boiling, mix in vegan chicken, cover and cook for 5 more minutes.

-The vegan chicken is already cooked, so you only need to warm for about 5 minutes.

Don’t overcook it.-

Squeeze in lime juice (about 2 teaspoons) and adjust seasoning, if necessary.

Serve soup with chopped avocado, cilantro, red chili flakes and rice.

*How long have you been a vegan?  

6 years

*What made you decide to embrace a plant-based diet?

I was really bothered by practices I read about and saw regarding slaughtering animals for food. It then turned into health reasons once I read more about what goes into meat, dairy, etc. and once I realized how much better I felt physically, I was sold.

*What was the hardest food (meat, dairy, eggs, etc) to move away from?  

Dairy! I used to live for cheese, big cereal bowls of ice cream, cake, etc. so that was definitely the hardest to do without. I would be in class, and the professor would order pizza for the class and I would just cry on the inside. LOL. But now that I'm so far removed from it, I don't crave it and I don't even have much of a sweet tooth anymore! When I do, it's satisfied by fruit or something very simple.

*Any advice for new vegans?

Definitely have a meal plan! I didn't know how to cook until I went vegan. You have to cook ahead of time to always have something ready to go during busy weeks because depending on where you live, there may not be pre-prepared vegan meals or fast food that you can readily access and that leads to you breaking down and eating non-vegan food or eating complete junk. I gathered an arsenal of cookbooks and made an Excel sheet of rotating weekly recipes.

*What are some of your favorite books/websites on veganism?  

My vegan resources revolve more around food rather than general veganism. Veganomicon, How It All Vegan, and Vegan Planet were my cookbook staples. Healthy. Happy. Life. is my favorite site for recipes.

*Please share a recipe you enjoy.

Pan-fried tofu cubes (panko bread crumbs, chili powder, garlic powder, onion powder, and chicken seasoning--or your other favorite seasoning sauteed in olive oil) and vegetable rigatoni (zucchini, diced tomatoes, bell peppers, and whatever other veggies you like sauteed in olive oil with rigatoni pasta, diced garlic, and nutritional yeast).

Vegan Brunch & Making Decisions

I'm not a shy person, but I have a hard time putting myself out there to meet new people...especially in a group setting.  My palms get sweaty, my heart starts to pound, and I talk faster than normal (is that even possible? lol).

A couple of weeks ago, Rosetta invited me to her place for brunch with her and three other ladies. Instead of talking myself out of the invite (like I usually do when invited anywhere) I pushed passed my anxiety and accepted.

We had an amazing time! Lots of food, music, wine, and discussions about business and life. I'm sooo glad I didn't miss out on this opportunity to hang with Rosetta again and meet some other amazing women.

Let's talk about the food! I never expect people to cater to my vegan diet but it warms my heart when they do.

We started off with a cheese platter, but Rosetta made sure to put almonds, grapes and  dates on it for me.

Then we cooked (mostly Rosetta lol) fried potatoes, greens and grits. Yummers! The other ladies also had salmon and Rosetta added cheese to their grits after serving mine.

We had a vegan apple pie from Whole Foods and So Delicious ice cream for dessert. OMG!

It's funny how making the decision to get uncomfortable is helping me come out of this self-imposed anxiety bubble. I've been saying I want to change for a long time, but making the decision is what led me to actually stepping out there and doing it.

I know we're talking about anxiety in this post, but this same decision principle applies to everything else in life, too. With food, if you really want to be a vegan make the decision.  Then spend some time researching vegansim, cooking and experimenting. :-)
